Bring on the comfort food! It has become significantly chilly these past couple of days, so anything warm and traditional is very welcome in my tummy :) This is how I used to make myself a roast when I briefly lived alone in York, it cheered me up and it is mainly a one-pot dish, which was useful in my super tiny kitchen.
Serves 1
1 chicken thigh
1 carrot
1 potato
small bowl of frozen peas
olive oil
Pre-heat the oven to 180 degree C
Peel and chop the potato into chunks
Peel and chop the carrot into chunks
Put everything into a casserole dish and drizzle with olive oil
Put into the oven for 30-45mins
2mins before serving, put the peas in the microwave
Serve with gravy
If you like your Yorkshire Puddings too much to miss them out, then use 1/8th of the recipe from Toad in the Hole to make the batter, pour into a bun tin, and put into the oven with the rest of the meal
