I first made these in my second year of university to wrap in foil and take to seminars and lectures with me for when I got peckish. I also found that they make lovely cake bars as well, if you just tip the mixture into a deep sided baking tray instead of spooning it onto baking paper. They are particularly good in the winter months because the spices are nice and warming. The original recipe is from BBC Good Food and can be found here
Makes 18
175g butter
80g demera sugar
50g honey
85g flour
1/2 tsp bicarbonate of soda
250g oats
1 tsp cinnamon
1 tsp nutmeg
2 tbsp boiling water
1 egg
Pre-heat the oven to 180 degrees C
Melt the butter, sugar, and honey in a large pan on a medium heat
Mix in the water and egg
Mix in the remaining ingredients
Line a baking tray with greaseproof paper
Spoon 2 tbsp of the mixture for each cookie onto the tray, about 2 inches apart
Bake for 15-20mins
Cool for 10mins
