Snack - Apple Cupcakes with Peanut Butter

This recipe is a hybrid of the Toffee Apple Cupcakes recipe, from a lovely cookbook my friend Anna bought me for my birthday, called Simple and Delicious Cupcakes, published by Love Food. I used to bake weekly for everyone in our house and most things were gone within days! I am happy to report, it is the same at my parent's house, though the food is more wholesome now, it is still yummy :)

Makes 16

2 apples
1 tbsp lemon juice
250g plain wholemeal flour
2 tsp baking powder
1 1/2 tsp ground cinnamon
35g light muscavardo sugar
55g butter
100ml milk
100ml juice
1 egg, beaten

Pre-heat the oven to 200 degrees C
Put 16 paper cases into bun trays
Core and roughly grate one apple
Slice the remaining apple into  32 wedges and toss in lemon juice
Sift together the flour, baking powder and cinnamon
Stir in the sugar and grated apple
Melt the butter
Mix with the milk, apple juice and egg
Add the liqued mix to the dry mix and stir until combined
Spoon into the paper cases and arrange 2 apple slices on top of each
Bake for 15-20mins
Cool for 10mins
Serve with peanut butter
