Snack - Lemon Drizzle Cake

This is so moreish it is difficult not to eat it all in one day! It takes a lot of mixing so you should be able to work up a good appetite for it!  The original is from BBC Good Food and can be found here

225g butter, softened
55g golden caster sugar
4 eggs
Finely grated zest of 1 lemon
225g wholemeal plain flour
1tsp baking powder
Splash of milk 

For the drizzle topping

Juice 1 1/2 lemons
40g golden caster sugar

Pre-heat the oven to 180 degrees C
Cream the butter and the sugar
Add the baking powder to the flour
Add 1 egg and mix
Add 1/4 of the flour and mix
Repeat until the eggs and flour are mixed in
Add a splash of milk and mix
Add the lemon zest and mix well
Line a loaf tin with baking paper
Pour in the mixture and smooth the top
Bake for 45mins
Mix the lemon juice and the sugar together
Once the cake is ready, take out of the oven and prick all over with a fork
Pour the juice mix over the cake
Once it has cooled, remove form the tin
Store in a lidded container
