Lunch - Fiorentina Pasta

This is a fantastic recipe to make a big batch of one evening, and then put into the fridge to be eaten for luch for a few days. The original recipe is from BBC Good Food and can be found here

300g pasta e.g penne or similar
1tbsp olive oil
500g sliced mushrooms
250g marscapone or any cream cheese
2 cloves of crushed garlic or 1 tsp garlic powder
2 handfuls of spinach
1 handful of grated parmesan or chedder cheese (for the sauce)
80g grated parmesan or chedder cheese (for the topping)

Boil the pasta according to the packet instructions, drain  and return to the pan
Fry the mushrooms in the oil and the garlic on a medium heat
Spoon the mushroom into the bottom of a casserole dish
Mix the spinach, marcapone or cream cheese and cheese together in a large bowl
Add the sauce to the pasta and heat for a few minuets
Spoon the pasta over the mushrooms
Scatter the cheese over the top
Grill until the cheese is golden
