Lunch - Honeyed Carrot and Garlic Soup

I first had this dish at a lovely pub in York called Plunkets on Low Petergate. It was so delicious I tried to find a recipe as soon as I got home! This is the closest I've managed to get to it, and it's pretty good.

Serves 6

2 tbsp butter
1 onion, diced
800g carrots, grated
2 tbsp honey
1/2 tsp garlic powder
1 bay leaf
21/2 l vegetable stock

Melt the butter in a large pan on a medium heat
Add the onions and fry for 2 mins
Add the carrots, garlic, honey and bay leaf and fry for 3mins
Add the vegetable stock
Bring to the boil, and then simmer for 30mins
Serve immediately, with a drizzle of natural yoghurt or sour cream if you like
