Dinner - Toad in the Hole

Another comfort food classic, and very easy to make. I like mine crunchy on the top with a soggy middle, but if you want it to be less soggy, just keep it in the oven for 5 - 10 more mins. Gorgeous with gravy and steamed carrots, broccoli and peas. This is original is from BBC Good Food, and can be found here

Serves 4 

8 sausages
150g plain wholemeal flour
2 eggs
300ml milk
1 tbsp olive oil
Salt and pepper

Pre-heat the oven to 200 degrees C
Put the sausages into a casserole dish and drizzle with olive oil
Season with salt and pepper
Bake for 25mins
Put the flour into a large bowl, make a well in the middle and add the eggs and milk
Whisk to make a smooth batter
Take the sausages out of the oven and pour over the mixture
Cook for 40mins until crisp and golden
Serve with steamed veg and gravy
