Snack - Moist Walnut Cupcakes

Another Simple and Delicious Cupcakes recipe, and one of my favourites because they are very simple and very moreish.

Makes 12

85g walnuts
55g butter, softend
50g caster sugar
grated rind of 1/2 lemon
70g wholemeal self raising flour
2 eggs

Pre-heat the oven to 190 degrees C
Line cupcake trays with 12 cupcake cases 
Roughly chop the walnuts
Beat together the sugar and butter
Beat in one egg
Mix in half of the flour
Beat in the other egg
Mix in the rest of the flour
Mix in the lemon rind and walnuts
Spoon into 12 cupcake cases
Bake for 20mins
Leave to cool
