Snack - Honey and Yoghurt Muffins




My lovely boyfriend got me a beautiful cookbook for Valentines Day called Cupcakes by Carol Pastor. It has 150 recipes for cupcakes and muffins with everything from savoury to sweet and indulgent. This is the first recipe I have tried, and I am sure there will be more to come!

Makes 12 muffins

55g butter
5tbsp honey
250ml natural plain yoghurt
1 egg
65ml lemon juice
150g plain flour
175g wholemeal flour
1 1/5 tsp bicarbonate of soda
pinch of nutmeg

Pre-heat the oven to 190 degree C
Line a muffin tin with 12 muffin cases
Melt the butter and honey over a low heat
Stir to combine and leave to cool
Whisk together the yoghurt, egg and lemon juice.
Add the butter and honey mixture
Sift together the dry ingerdients
Fold the wet ingredients into the dry ingredients
Fill the cases about 2/3 to the top
Bake for 20mins
Leave to cool on a wire rack for 10mins
Serve warm, drizzled with honey and yoghurt if you like
